Sangiovese and Cabernet Sauvignon.

Limy clay soil.

HARVEST:
Hand-picking in the second week of October.

VINIFICATION:
Traditional methods for fine quality black grapes.

AGEING:
Manual, in 225-litre barriques for 6 months.

BOTTLE AGEING:
Minimum 6 months.

ALCOHOL CONTENT:
13,00%.

SERVING:
Decanting recommended; serve at 18-19C.

SERVING WITH FOOD:
Red meat dishes, furred game, matured cheeses.

COLOUR:
Warmly intense, deep ruby red with subtle purple hues.

BOUQUET:
Full, elegant and stylish with hints of ripe red fruit, and complex spicy, oaky aromas.

FLAVOUR:
This is a dense, weighty wine with very soft acidic balance, smooth palate entry and sweet tannins. A full-bodied wine with harmonious structure.

DESRIZIONE:
The Carpinaia vineyard has south-west exposure and the highest part of the vineyard is at an altitude of about 300m above sea level. The stony soil is somewhat vulnerable to drought and to erosion following heavy rainfall. However the grapes grown here produce uncommonly strong wines with generous aromas, though they rarely reach sufficient cropping levels to make 30-35 hl. of Chianti Classico.
